Tasting notes
At Passochianche the rigorous grape thinning and a complete ripening make it possible to craft a rich wine, perfect for long ageing.
This Chardonnay ferments in oak where it remains in contact with the lees for a minimum of 6 months during which it forms its impressive structure while maintaining a savoury freshness.
Pairings
A with with depth and weight, accompanied by a soaring freshness, PC can be served with fish and seafood, also sushi, patè, entrées with fish or white meats.
Why we like it
Contrada PC was created over time. As the vines of Chardonnay grew older, certain parcels started to excel.
PC comes from a minuscule terrace parcel (Passochianche) lying at 870 – 1000 meters / 2854 – 3280 feet a.s.l. just above the main estate of Passopisciaro. Here the roots of the Chardonnay have made their way among the lava rocks.
